Can you make a cake using sour cream? We at Russian Recipe Book have known the answer very well. Because we’ve baked it many times, and it has never failed to impress. If you think it’s just another poundcake because it looks like one, think again! Better yet, bake it and taste it for yourself! It’s quick and really easy to make.
TIP: Use a disposable paper pan if you want a nice presentation and worried about damaging the cake when taking it out of the mold. It’s a must if you are making it for a party or potluck dinner. Here is a paper pan that works well for this cake: Round Paper Cake Pan
Ingredients
- 3 eggs
- 1 ½ cups sugar
- ½ cup butter (1 stick), softened
- 10 ½ ounces sour cream
- 1 teaspoon vanilla extract
- 2 teaspoons baking powder
- 1 cup raisins
- 2 ¼ cups all-purpose flour
Method
Step 1
Mix the sugar and eggs and whip lightly
Step 2
Add the butter and sour cream, and mix until smooth
Step 3
Add the vanilla extract and baking powder and mix
Step 4
Add the flour, stirring until it’s thoroughly mixed. The dough should be thicker than pancake batter, but it should still flow freely.
Step 5
Add the raisins and stir by hand just enough to mix in the raisins evenly. Don't overdo it or use an electric mixer because you may damage the raisins!
Step 6
Stir the batter, and pour it into the mold filling it evenly. You can use a metal, silicone, or paper cake pan.
Step 7
Bake for approximately one hour at 350°F until a match or toothpick comes out dry
Step 8
Let cool before taking the cake out of the pan
Step 9
OPTIONAL: Dust with confectioners’ sugar before serving or use your favorite frosting. Serve and enjoy!
